Southwest Culinary Boot Camp - $750.00 per person.We have added something new this winter. Join us for an intensive 3-day cooking program we are calling Southwest Culinary Boot Camp! This program is three full days gaining insight into the intricacies, tips and history of Southwestern food that make it so unique. We will cover material from knife skills, flavor labs, cooking techniques, ingredients and historical building blocks of the food. We will meet some of Santa Fe's top chefs who will share some of their thoughts on important cooking techniques. This is a hands-on and very interactive program that culminates in a final exam where you will design and prepare a final meal for some Santa Fe's best palates!

Prefer to get your hands into your work? The SFSC is also offering a hands-on cooking class preparing a tailgating picnic for your night at the opera. Opera tailgating has become an integral part of the opera experience and a local tradition. This year you'll arrive with gastronomic delights you prepared under the guidance of the SFSC's fabulous chef instructors. Another one-of-a-kind experiential offering from the newest Santa Fe partnership, The Santa Fe School of Cooking and The Santa Fe Opera! Menu includes:

We will send you away with the meal you have made to serve 2 people. If you would like to prepare food for any additional guests, it is an additional $25 per person you are preparing food for. You will take your prepared food in a basket complete with plates, flatware and all you will need to enjoy your tailgating. The Santa Fe Opera staff have teamed with the culinary professionals at the Cooking School to create a lively and informative exploration of this opera. You will gain a better understanding of the productions, watch the preparation of regional and era-specific meals inspired by food references in the operas and dining trends of the periods. The menu includes: salade de haricots verts, French-herbed chicken and mushroom skewers, blanched asparagus, rillette sd'canard confit, creamy brie sauce, crème brulee to die for....and lemon shortbread cookies DEMONSTRATION STYLE

The menu includes: marinated artichoke heart and manchego bake, pan rustica, Spanish olive tapenade, preserved lemon shrimp with jamon serrano, hunter's wings and almond confetti. DEMONSTRATION STYLE
A Day in the Country of Northern New Mexico: Farms and Vineyard Tour - $245.00 per person.
Join us for this unique opportunity to visit the farms and villages of northern New Mexico. Meet the farmers and food processors that are keeping traditional agricultural and foods alive. Explore the fields of Seeds of Change in the charming village of El Guique on he banks of the Rio Grande river. Learn about Seeds of Change and how it implements it's mission of helping to preserve biodiversity and promote sustainable organic agriculture. The highlight of the visit to Seeds of Change will be taste testing different varieties of seasonal fruits and vegetables. Next stop will be a visit to the scenic village of Velarde, where we will visit the orchards and processing plant of the Velarde family, the namesake of the village. A visit to the plant highlights the processing of New Mexican foods in the ways used for centuries.
A late lunch will be enjoyed in the vineyards of Estrella Del Norte Vineyard in the lush village of Nambe. The spectacular property represents eight different New Mexico vineyards. After a brief history of grape growing in New Mexico and a wine tasting, lunch will served with your choice of wine under the cottonwood trees.
Tour departs from Santa Fe at 8:45 in the morning and returns mid to late afternoon. Transportation and guide provided. Limited to 12 guests.

Wine Maker's Cooking Class Series - $135.00 per person.
Come celebrate the glorious summer season of Santa Fe by joining us at Estrella Del Norte, a charming vineyard 20 minutes north of the capital. We will be offering this very special program four times throughout the season. Meet at Estrella Del Norte and watch one of our chefs prepare a meal with the freshest ingredients available. The class is being held outside in the middle of the vineyard where everything will be prepared in a wood burning oven or on the charcoal grill. After the preparation of the meal, let one of our local New Mexican winemakers discuss the history of grape growing in New Mexico and try some of northern New Mexico's best wines!

Fajita is a diminutive form of the Spanish word for "belt", a term that butchers used along the Texas -Mexican border to describe what is called skirt steak in the U. S. Our chefs embellished the traditional skirt steak to create our own Southwestern version of this popular dish: Shrimp Ceviche, Chipotle Marinated Steak Fajitas, Chunky Avocado Salsa, Roasted Tomatillo Salsa, Habanero Pickled Onions, Jicama-Orange Salad with Red Chile Vinaigrette Dressing and Coconut Pound Cake.

Tapas are a traditional Spanish way of eating with origins that ostensibly date to the 13th century. They are small appetizers/finger foods, made from a wide variety of ingredients. In contemporary restaurants they are often combined to make a full meal. We offer a New World version: Shrimp Escabeche with Black Olives and Mint, Achiote Citrus Steamed Chicken in Banana Leaf, Picadillo Empanadas with Aji Amarillo salsa, Marinated Purple Potatoes and Sweet Coconut Rice Pudding.
