Casa de Chimayo
, The owner of Casa de Chimayo Restaurant, Robert Cordova, learned to plant, harvest and roast green chile from the time he was a small boy growing up in Northern New Mexico. His family-great grandparents, grandparents, aunts, uncles and cousins helped make Chimayo chile famous. Holidays were huge feasts of chile and beans, carne seca, pan, tortillas, flan, sopa and more, all cooked with lots of love.
Robert continues these traditions at Casa de Chimayo serving some of the best Northern New Mexican cuisine in Santa Fe. Visit them at the corner of Guadalupe and Water Streets across from the Hilton Hotel. Hours of operation are 11AM-2PM and 5PM-9PM Monday through Saturday and brunch on Sunday from 10AM until 3PM.
