Chunky Salsa Verde

Ingredients
- 1 medium cucumber
- 4 ounces tomatillos, chopped
- 1 tablespoon dried green chile powder
- juice of ½ lime
- 1 Tablespoon vegetable oil or sunflower oil
- 2 -3 tablespoons minced fresh cilantro
- Kosher salt or coarse sea salt (MS187)
Instructions
- Peel the cucumber and half it lengthwise. Scoop out the watery center with a spoon and discard it. Chop the cucumber. Mix the cucumber, tomatillos, green chile powder, lime juice and vegetable oil in a bowl.
- Stir in the cilantro and season with salt to taste. Serve at room temperature.
