Virtual Cooking Classes

Welcome to our newest Santa Fe School of Cooking adventure….virtual classes! We have been working hard on our virtual classroom, and we're excited to present the results to you. We will continue to add new virtual classes to the mix just as quickly as we can –– do stay in touch with us so you don't miss a thing.

We wanted to write to let you know how much we miss you, and the possibility to travel now to attend SFSC classes in person, but how much we have enjoyed your virtual classes. We’ve watched more than a half dozen, each several times, and they really help fill a void. It is a pleasure to “reconnect” with some of the chefs we’ve met in person (and to meet one new one - Rocky Durham - who has taught us several very useful new techniques, even if he does use a metal spoon in his La Chamba pot!). We’ve made quite a few of the recipes ourselves, a few of them multiple times (Mica Chavez’ calabacitas and cabbage slaw are favorites, we have tomatillo sauce stored in the freezer, and since we already eat a lot of salmon, the poblano-lime jam added a new variety and sparkle to our diet). John is still frustrated that his ability to roast and peel peppers is so clumsy compared to what your chefs demonstrate, but fortunately we can get Bueno here so we often use that. We have even gotten a La Chamba pot, just because, even though things were working fine with a Dutch oven (yes, we will use wooden spoons). Your videos have been a most welcome palliative for a difficult summer here in North Carolina, and we thank you for them. Please, make more! -Helen Adams & John Russ
In addition to each cooking demonstration, every class includes all the recipes and a shopping list for the ingredients. These classes are pre-recorded and once you have them you can watch them as many times as you like and whenever you want. Most classes run for approximately an hour, and you can choose to watch the class and then prepare the dishes at your leisure or cook right along with the Chef if you shopped in advance. Most importantly, we want you to have fun cooking with us at The Santa Fe School of Cooking!

Mole is a sauce that originated in Mexico and, more specifically, the states of Puebla and Oaxaca. It can be black, red, yellow, green and pipian with chile peppers being the common ingredient. The moles of today have also added chocolate, pine nuts, pepitas, sesame seeds and cilantro just to name a few to their list of ingredients adding more complexity and richness to the sauce. We are featuring one of our favorite moles from the school that is tasty and not too complicated to make.

In this class you will learn to make smoked chicken with mole, and one of our favorite side dishes, a three bean salad that is great for outdoor summer dining.
