Mulato Chile Sauce
Mulato chiles are treasured for their rich, velvety flavor and exceptional depth, making them a cornerstone of many traditional Mexican sauces and moles. A fully ripened, dried poblano chile, the mulato develops complex notes of chocolate, dried cherries, raisins, coffee, and warm spice with only a gentle, lingering heat. In this sauce, toasted mulato chiles blend with roasted tomatoes, aromatic spices, and savory stock to create a smooth, deeply layered sauce with remarkable richness and balance. The result is a versatile chile sauce that adds authentic Mexican flavor to enchiladas, braised meats, roasted vegetables, and countless Southwestern favorites.
Ingredients
- 10 to 12 Mulato pods (MS589)
- 1/2 cup olive oil (MS620)
- 1/2 yellow onion, diced
- 4 cloves garlic, minced
- 4 Tablespoons flour
- 1 Tablespoon toasted and ground coriander (MS629)
- 1 teaspoon toasted and ground cumin (MS446)
- 6 cups chicken stock
- 4 Roma tomatoes, halved lengthwise and roasted on a Santa Fe School of Cooking Grill or in oven until lightly charred
- Salt and pepper to taste
Instructions
- Remove the stems and seeds from the chiles. Wash, then toast in a hot, dry pan about 10 seconds on each side.
- In a saucepan, add half the oil and sauté the onion until translucent. Add the garlic and sauté 1 minute. Add the remaining oil. Stir in the flour, coriander, and cumin. Stir in the chicken stock and bring to a boil. Add the tomatoes to the mixture then the chile powder. Turn heat down to simmer and cook for about 20 minutes. Add salt and pepper to taste.
- Puree the sauce in a blender or food processor. Strain and adjust the seasoning. Can be made ahead and frozen.
