  1. Remove the stems and seeds from the chiles. Wash, then toast in a hot, dry pan about 10 seconds on each side.
  2. In a saucepan, add half the oil and sauté the onion until translucent. Add the garlic and sauté 1 minute. Add the remaining oil. Stir in the flour, coriander, and cumin. Stir in the chicken stock and bring to a boil. Add the tomatillos to the mixture then the chiles. Turn heat down to simmer and cook for about 20 minutes. Add salt and pepper to taste.
  3. Puree the sauce in a blender or food processor. Strain and adjust the seasoning. Can be made ahead and frozen.
